Healthy Cuisine for Kids Hits Fargo, North Dakota

What a great time I had in Fargo, North Dakota, working with Chef Michael Roddey as we conducted the NFSMI course Healthy Cuisine for Kids. The North Dakota Department of Public Instruction sponsored the course which was attended by participants from a number of school districts in the region. Along with instruction on nutrition, meal requirements, and culinary techniques, the participants cooked up a storm of new recipes previously test-tasted and approved by students. Thanks to the Dakota Medical Foundation for providing us with a beautiful facility for learning.
